Vegetarian Burrito (Copycat Chipotle)

One of my favorite menus to serve at a party or picnic is a Mexican bar inspired by the restaurant Chipotle Mexican Grill! It’s easy to prep all of the ingredients ahead of time and set up a “do it your self” assembly bar. Guests can customize a burrito or burrito bowl however they like!

This Mexican menu has always been a crowd pleaser! I usually set up all of the ingredients in the order in which they are displayed at Chipotle. I also include tortillas, chips and hot sauces along with all of the fillings.

A vegetarian burrito inspired by Chipotle Mexican Grill

Ingredients

Instructions

  • Place a large tortilla (10″) on a flat surface. (Note: I like to heat my tortilla first on the stove at a low flame. Heat both sides of the tortilla till lightly brown. Alternatively, you could microwave the tortilla.)
  • Start with a bed of Cilantro Lime Rice (3/4 cup)
  • Layer Black Beans on top (1/2 cup)
  • Add Fajita Veggies (1/2 cup)
  • Top with Pico de Gallo (1/4 cup)
  • Add Corn Salsa (1/2 cup)
  • Spoon Sour Cream on top (2 tbsp)
  • Sprinkle shredded Monterey Jack Cheese (1/4 cup)
  • Add Guacamole (1/4 cup)
  • Top off with Romaine Lettuce (1 cup)

Notes

  • I used a spinach & herb tortilla for this burrito. Feel free to use any flavor of tortilla that you like! However, a large 10 inch “burrito” sized tortilla works best.
  • Quantities shown are per 1 standard serving. Feel free to modify as you wish! 🙂
  • This recipe is inspired by Chipotle Mexican Grill, but it is not identical and is my own version. I hope you love it!
  • Vegan Option: Omit cheese and sour cream or replace with dairy free versions.
