Masala Chai

Lately, my mornings don’t start without a hot cup of chai prepared by my husband. If you have known me for years, you may have read that and done a double take: chai?! Yes, that is right. The coffee addict has converted over to chai tea.

Now don’t get me wrong, I still love a great caramel latte every now and then. But, I usually only drink coffee now when the hubs is not around. When he is there, why on earth would I drink coffee when I can drink his amazing tea?

That’s just how magical my husband’s chai is. I may be the cook in our family, but he is the Masala Chai master! Every morning, he patiently boils the water, crushes the spices, simmers the tea, and brews up an amazing cup of magic. It brings me to life and reminds me that one of the best parts of my life is the amazing man that I am married to. 🙂

I realized that it was only fair that I get the recipe from him and share his magical Masala Chai with all of you! But, now that I learned the recipe, I still don’t plan on making it any time soon. Hehe.

Indian style tea made rich with milk and flavorful with spices

Ingredients

Instructions

  • Add 1 cup of water to a small pot.
  • Grate 1/4 inch piece of fresh ginger into the pot.
  • Crush 2 pods of cardamom and 1/2 inch cinnamon in a mortar and pestle. Add to the water. (Note: make sure you remove the green outer layer and only use the black cardamom seed.)
  • Boil the spice infused water at a medium flame.
  • Once the water starts to boil, add 2 tbsp tea powder (loose leaf black tea).
  • Also add 2 tbsp sugar. (Note: if you prefer to add honey to flavor your tea, skip this step. Add honey at the end.)
  • Let the tea boil at a medium flame for 2-3 minutes until it starts to change color and develop a reddish brown hue.
  • Then add 1 cup of milk.
  • Boil for another 2-3 minutes until the tea starts to rise.
  • Once the tea starts to rise, immediately reduce the flame. (Note: Supervise your tea during this time to prevent it from rising up too much and spilling over!)
  • Let the tea simmer at a low flame for another minute.
  • Take the tea off flame and strain into tea cups.
  • Add more sugar if you prefer. (Note: if you prefer honey, add it at this point.)
  • Enjoy your Masala Chai piping hot! 🙂

Notes

  • My favorite brand of tea powder is Wagh Bakri.
  • As mentioned in the instructions, if you opt to use honey instead of sugar to sweeten your tea, add it in the end instead of letting it boil with the tea.
  • My husband prefers to add all the spices at the beginning of the process to let them completely immerse into the tea.
  • There are many versions of this recipe. This is my husband’s tried and true version.  I hope you love it!
  • Vegan Option: Use Dairy-Free milk to make Vegan Masala Chai! I would suggest Almond Milk for a sweet, nutty flavor.
