Tindora Fry

This is one of my go to “it’s dinner time and I don’t have a plan” side dishes to make! Tindora Fry is a super simple North Indian style dry masala that takes less than 10 min to pull together!

All you gotta do is grab a frozen packet of Tindora/ Thondekai/Ivy Gourd, toss it in a basic spice based tempering, and you are done! No chopping is required in the making of this dish.

While this dish has Indian flavors, it doesn’t necessarily need to be part of an Indian ensemble. Its a great veggie side for any type of meal! I actually love adding this to some cracked wheat for a balanced lunch or dinner bowl.

Of course, Tindora Fry does also taste absolutely fab with some hot roti/ chappati! However you want to eat it, it’s the perfect choice for a busy weekday! 🙂

Tindora/Ivy Gourd roasted in a simple North Indian based tempering

Ingredients

Instructions

  • Heat up 2 tbsp of oil in sauté pan at a medium flame.
  • Add 1 tsp of cumin seeds and let splutter.
  • Once the cumin seeds brown, add 1/4 tsp turmeric, 1/2 tsp red chili powder, 1 tsp coriander powder, and 1 tsp garam masala. Swirl your pan around to make sure it is completely coated in this spice based tempering.
  • Add in thinly sliced tindora. (Note: I used a packet of frozen tindora that came pre-sliced.)
  • Completely coat the tindora in the tempering. Increase the flame and fry the tindora at a high flame for a few minutes.
  • Lower the flame, add salt to taste, and cook covered for a few more minutes.
  • When the tindora is well cooked, take off flame and serve hot. Enjoy! 🙂

Notes

  • I typically use frozen Tindora for this recipe, as fresh isn’t always available near me. This recipe is per one 12 oz packet of Tindora. I prefer Swad or Laxmi brand.
  • There are many versions of this recipe. This is my tried and true version that I came up with.
  • Vegan Option: This recipe is Vegan! 🙂
