Dill Rice

Dill rice is a light and simple recipe that I learned from my mother. Its perfect for a one pot lunch or dinner! The main ingredient you need is fresh dill and the rest of the ingredients are basic Indian pantry staples. I hope you try it soon!

A light dish featuring dill and peanuts in a South Indian style tempering

Ingredients

  • 3 cups cooked Basmati Rice (or 1 cup uncooked)

  • 2 tbsp lemon juice

  • 2 tbsp oil

  • 2 tsp mustard seeds

  • 2 tsp jeera/ cumin seeds

  • 1 tbsp chana dal/ split desi chickpeas

  • 1 tbsp urad dal/ split matpe beans

  • 2 tbsp peanuts

  • 4 cloves garlic (thinly sliced into strips)

  • A few curry leaves

  • 4-6 green chilis (minced)

  • 2 medium yellow onions (finely diced)

  • 4 cups dill (finely chopped)

Instructions

  • Cook 1 cup uncooked  Basmati rice in a Pressure Cooker, Instant Pot, or Rice Cooker to get 3 cups of cooked rice (see “Notes” section below for cooking instructions).
  • Transfer the cooked rice to a separate container. Let it cool.
  • Mix in 2 tbsp lemon juice to the rice. Keep aside.
  • Heat up 2 tbsp oil in a sauté pan at a medium flame.
  • Add 2 tsp mustard seeds to the oil.
  • Once the mustard seeds start to crackle, add 2 tsp cumin jeera/cumin seeds. Sauté for a few minutes till the jeera/cumin seeds start to brown.
  • Next, add 1 tbsp chana dal and 1 tbsp urad dal. Sauté for a few minutes. The dal should change color slightly and become golden. 
  • Add 2 tbsp peanuts. Roast for a few minutes.
  • Then, add 4 cloves garlic (thinly sliced into strips). Sauté till aromatic.
  • Add a few curry leaves, 4-6 green chilis (minced) and finely diced yellow onions (2 medium). Sauté till translucent.
  • Then, add 4 cups of dill (finely chopped).
  • Cook for a few minutes and then add salt to taste.
  • Finally, add the cooked Basmati rice ( 3 cups).
  • Mix well. Add a bit more lemon or salt, if required. Serve hot! 🙂

Notes

  • Cook 1 cup uncooked Basmati rice with 1.5 cups water in a Pressure Cooker, Instant Pot, or Rice Cooker. It typically takes 20 min to cook the rice.
  • If you already have cooked rice, it only takes 10 min to make the Dill Rice.
  • For this particular recipe, I prefer to slice the garlic into thin strips. It really adds to the flavor.
  • I prefer to mince my green chilis in a grinder. However, you can finely mince them by hand or even just slit them.
  • There are many versions of this recipe. This is my tried and true version that I learned from my Mother. I hope you love it!
