Vegetarian Stir Fry Noodles

I love going to a good stir fry restaurant! I am talking about one of those places where you can choose your own veggies, pick your favorite sauce, specify your choice of noodles/rice, and they toss up a delicious, custom dish for you within minutes!

It’s just as simple and delicious to make your own stir fry at home. It just takes 4 easy steps.

4 simple steps to create a simple Veggie and Noodle Stir Fry

Ingredients

  • 4 blocks noodles

  • 2 tbsp oil

  • Flavor Ingredients
  • 2 cloves garlic (minced/ crushed)

  • 1 inch ginger (grated)

  • 1/2 tsp black sesame seeds

  • 1/2 tsp white sesame seeds

  • 2 scallions/ spring onions (sliced into thin circles and separated into white and green parts)

  • Veggies
  • 1 medium carrot (thinly sliced/ julienne

  • 1/2 small broccoli (separated into florets)

  • 1 medium red pepper (thinly sliced/ julienne)

  • 1/2 packet (8 oz) of Shitake mushrooms (sliced and halved)

  • Stir Fry Sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water

  • 1 tbsp red chili sauce

  • 2 tbsp soy sauce

  • 1/4 tsp vinegar

Instructions

  • Step 1: Heat up your flavor ingredients.
    Heat up 2 tbsp oil at a medium flame. Add your flavor ingredients and sauté till aromatic.
    I used:
    2 cloves garlic ( minced/ crushed)
    1 inch ginger (grated)
    1/2 tsp black sesame seeds
    1/2 tsp white sesame seeds
    White part of 2 scallions/ spring onions (thinly sliced into circles)
    You could also add: red chili flakes or finely diced onions.
  • Step 2: Cook your veggies!
    Add your veggies and toss! Cook covered for a bit. Once the veggies are cooked, add salt to taste.
    I used the following veggies:
    1 medium carrot (thinly sliced/ julienne)
    1/2 small broccoli (separated into florets)
    1 medium red pepper (thinly sliced/ julienne)
    1/2 packet (8 oz) of Shitake mushrooms (sliced and halved)
    You can use a variety of veggies. The possibilities are endless!
  • Step 3: Add your Favorite Sauce.
    Mix your stir fry sauces in a bowl. Add to the cooked veggies and mix well. I used a sauce made from the following:
    1 tbsp cornstarch mixed with 2 tbsp water
    1 tbsp red chili sauce
    2 tbsp soy sauce
    1/4 tsp vinegar
    This is a simple Vegetarian friendly stir fry sauce. Feel free to use your favorite sauce!
  • Step 4: Mix in the Noodles!
    Now mix in the cooked noodles. Use whatever noodles you prefer. Cook noodles per package instructions. Strain the noodles, rinse with cold water, toss with a bit of oil, and keep aside. Take off flame, and garnish with the green part of the scallions/spring onions (thinly sliced into circles)  Enjoy hot! 🙂

Notes

  • Feel free to use any brand of Noodles you prefer. I used Ching’s Secret Desi Noodles. I used a larger packet that includes 4 noodle blocks inside. They also sell smaller packets with 2 blocks inside. Any noodles would work for this recipe. Alternatively, you could use thin pasta noodles like Spaghetti or Angel Hair.
  • I prefer to crush my garlic via a mortar and pestle. You could finely mince by hand or use a pre-made garlic paste.
  • I prefer to grate my ginger. Alternatively, you could use a pre-made ginger paste.
  • There are many versions of this recipe. This is my tried and true version that I came up with.  I hope you love it!
