Spicy Chipotle Pasta (Copycat Cheesecake Factory)

Have you ever been to the Cheesecake Factory? It’s one of my favorite restaurants to dine at! One of the best parts about this restaurant is that they have so many options to choose from! The menu is literally a book. But, my husband will always order the same thing: Spicy Chipotle Chicken Pasta (without chicken).

I love this spicy, creamy pasta too! It has such a unique blend of flavors and vegetables. I never would have thought to use asparagus, red bell peppers, and green peas in pasta, but they work so great together! I was quite inspired and just had to try to re-create this delicious dish at home! The absolute best reward for my effort was when my husband happily said that it tasted EXACTLY the same! 😀 Try my recipe out for yourself and let me know if you agree! VIDEO TUTORIAL INCLUDED! Scrumptious entrees like this Spicy Chipotle Pasta are just one of the many reasons why I love dining at the Cheesecake Factory. More than anything, I just love the overall experience! I simply adore the delightful brown bread they serve before every meal. The appetizers and entrees are always good. And I always can’t wait to order mouth watering cheesecake for dessert at the end. No matter how full you are, you simply can’t go to the Cheesecake Factory without ordering cheesecake! My favorite flavor is Chocolate Chip Cookie dough. 🙂

The Cheesecake Factory is definitely one of my favorite places to go for date night on special occasions such as Valentine’s Day! However, during quarantine Valentine’s Day of 2021 during the COVID era, we were not able to go out for a date night! So, I decided to create my own date night in Charcuterie board inspired by menu items from the Cheesecake Factory! I served brown bread (Cheesecake Factory bread), homemade Bruschetta (check out my tried and true recipe here), Spicy Chipotle Pasta, and of course..cheesecake! There were a few other treats as well. Spicy Chipotle Pasta (Copycat Cheesecake Factory)

Penne pasta in a spicy, creamy Chipotle pepper sauce with asparagus, red bell peppers, and green peas

Ingredients

  • 2 cups dry Penne pasta (I used half a 16 oz box of Barilla Penne Pasta)

  • 1 tbsp butter

  • 2 tbsp olive oil

  • 2 cloves garlic (minced)

  • 1 medium yellow onion (diced)

  • 4 medium asparagus (chopped into medium pieces)

  • 2 medium red bell peppers (thinly sliced)

  • 1 cup green peas

  • 1/2 tsp salt

  • 1/2 tsp ground black pepper

  • 1/4 cup Chipotle sauce (the sauce from a can of Chipotle peppers in Adobe sauce)

  • 1 cup heavy whipping cream

  • 1 tbsp lime juice

  • 1 tsp cumin powder

  • 1 cup grated Parmesan cheese

  • A handful cilantro (finely chopped)

Instructions

  • Cook 2 cups dry Penne pasta (a standard 16 oz box) per package directions. Drain the water and keep aside.
  • Heat 1 tbsp butter and 2 tbsp of olive oil in a sauté pan at a medium flame.
  • Add 2 cloves garlic (minced) and sauté till aromatic.
  • Add 1 medium yellow onion (diced) and sauté till translucent.
  • Then, add 4 asparagus (chopped into medium pieces), 2 medium red peppers (thinly sliced), and 1 cup green peas. Let the vegetables cook covered for a few minutes.
  • Once the vegetables are mostly cooked, add 1/2 tsp salt and 1/2 tsp black pepper.
  • Cook the vegetables for a few more minutes. Then, add 1/4 cup chipotle sauce.
  • Stir in 1 cup of cream, 1 tbsp lime juice, and 1 tsp cumin powder.
  • Let the sauce simmer for a few minutes. Once the sauce starts to bubble, add the cooked Penne pasta.
  • Add in 1 cup of grated Parmesan cheese and mix well.
  • Take off flame and garnish with a handful of cilantro (finely chopped). Enjoy! 🙂

Notes

  • I used Barilla Penne pasta for this recipe. Feel free to use any pasta you desire.
  • The Chipotle sauce comes from a can of Chipotle peppers in Adobe sauce. I just used the sauce in the can. If you would like extra heat, you can add a pepper or two as well!
  • This recipe is inspired by the Cheesecake Factory’s Spicy Chipotle Chicken Pasta (without chicken), but it is not identical and is my own version. I hope you love it!
  • Vegan Option: Replace cream/milk with dairy free cream/milk and use vegan parmesan (or omit cheese) for a vegan option!
