Green Beans Masala

Green Beans Masala/ Hurlikai Palya is one of my go to side dishes! It’s healthy, vegan, quite simple to prepare, and very versatile! In my family, we love this simple dry masala with classic South Indian dishes such as Chitranna (Lemon Rice), Mosranna (Yogurt Rice), and Puliogare (Tamarind Rice). But it tastes great with a hot chappati or roti as well! 😊

This is by far one of the easiest side dishes to make! In Kannada, we call this type of dish “Oggarane Palya,” and it is the perfect accompaniment to chappati/roti.

Oggarne palya is a dry curry that doesn’t have any gravy and instead is made with a basic tempering type masala. These type of palyas are very simple to make and are very healthy, since they are exempt of any heavy gravy and focus just on the vegetables. There are many types of oggarne palyas that you can make. Hurlikai Palya is one of my favorites!

A dry curry featuring green beans in a South Indian style tempering

Ingredients

Instructions

  • Heat 2 tbsp oil in a sauté pan at a medium flame.
  • Add 1 tsp mustard seeds to the oil.
  • Once the mustard seeds start to crackle, add 1 tbsp chana dal and 1 tbsp urad dal. Sauté for a few minutes. The dal should change color slightly and become golden.
  • Add 1 medium yellow onion (finely diced) and sauté till translucent.
  • Add 2-4 green chilis (minced) and sauté for a few minutes.
  • Then, add 2 cups green beans. (Note: first break off the ends of the green beans. Then, wash them well and thinly slice into circles.)
  • Add 1/2 cup of water. (To expedite the process, boil the water ahead of time.)
  • Cook covered for a few minutes.
  • Once the green beans are nicely cooked, add salt to taste, and cook for a few more minutes.
  • Garnish with a handful of grated coconut, if you desire. Let cook for another minute or two. Then, take off flame and enjoy! 🙂

Notes

  • You could also make this recipe with French Cut Green Beans.
  • The most time consuming part of this recipe is to break off the ends of each green bean. The rest of this recipe is quick and easy!
  • I prefer to mince my green chilis in a grinder. However, you can finely mince them by hand or even just slit them.
  • There are many versions of this recipe. This is my tried and true version that I learned from my Mother. I hope you love it!
