Cucumber Raita

Raita/Mosru Bajji or yogurt salad, is a basic side dish that is the perfect accompaniment to almost any Indian dish…especially rice items! Although it’s a standard dish, everyone makes it just a little differently.

I make my mother’s classic version of this recipe, which includes finely diced tomatoes, cucumber, red onions, and a South Indian style tempering involving mustard seeds and curry leaves. You can check this recipe out here.

However, I learned another fun version of Raita/ Mosru Bajji from my mom that involves only cucumber. In this version, the cucumber is grated and ground black pepper is included for extra flavor. It’s so simple, yet so delicious! 🙂

Yogurt salad involving grated cucumber and a South Indian style tempering featuring ground black pepper as the main flavor ingredient

Ingredients

  • 6 cups of yogurt (Check out how to make homemade yogurt here.)

  • 1 tsp salt

  • 1 medium cucumber (grated)

  • A handful of cilantro (finely chopped)

  • 1 tbsp oil

  • 1 tsp mustard seeds

  • A few curry leaves

  • 1/2 tsp ground black pepper

Instructions

  • Use a beater to whisk a pot of yogurt (6 cups) into a smooth, lump-free consistency.
  • Mix in 1 tsp salt with a spoon.
  • Add in 1 medium cucumber (grated) and mix well. Include the water from the cucumber, as it adds to the flavor.
  • Top with a handful of finely chopped cilantro and tempering.
  • To make tempering, heat 1 tbsp oil in a small pot at a medium flame. Add 1 tsp mustard seeds. Once they start to crackle, add a few curry leaves. Take off flame and sprinkle in 1/2 tsp of ground black pepper. Then, add to the raita! Enjoy 🙂

Notes

  • Sometimes I peel the cucumber before grating and sometimes I leave the skin on. It just depends on your preference.
  • As mentioned in the instructions, make sure you add the cucumber water to the raita. It really adds to the flavor!
  • There are many versions of this recipe. This is my tried and true version that I learned from my Mother. I hope you love it!
