Mexican cuisine features a wide variety of fresh, delicious salsas and other similar side dishes that taste absolutely amazing with tortilla chips or on top of most Mexican main dishes. One such delight is a classic corn salsa.
This is a simple version of this salsa that involves just a few other basic ingredients such as onions, cilantro, and jalapeños. There are similar versions that also involve the addition of poblano peppers and/or green peppers. You could modify as you wish and add more heat if you desire. 🙂

Corn Salsa

Ingredients
2 cups cooked corn (or a 16 oz can)
1/2 medium red onion (finely diced)
1/4 cup cilantro (finely chopped)
1/2 tsp jalapeño (minced)
1/4 tsp salt
1/4 tsp black pepper (crushed)
1/2 lime (squeezed)
Instructions
- Add 2 cups cooked corn (or a 16 oz can) to a bowl.
- Also add 1/2 medium red onion (finely diced), 1/4 cup cilantro (finely chopped), and 1/2 tsp jalapeño (minced).
- Add 1/4 tsp ground black pepper and 1/4 tsp salt.
- Squeeze in the juice of 1/2 lime.
- Mix well. Enjoy fresh! 🙂

Notes
- I prefer to use red onions for this dish. However, you could use white or yellow onions instead.
- There are many versions of this recipe. This is my tried and true version that I came up with. I hope you love it!
