There is just something so magical about rice. Just a few grains turn into a bowl of soft, fragrant delicious-ness. Add a bit of simple flavors and you can get a delicious dish! The most amazing part is that you can create dishes from a variety of cuisines if you use just the right ingredients.
For instance, add cilantro and lime to a steaming bowl of cooked long grain rice and you have the perfect Mexican base. Toss it in a salad bowl or layer it up with a tortilla to make the perfect burrito!

Cilantro Lime Rice (Chipotle Copycat)

kcalA simple Mexican rice dish flavored with cilantro and lime
Ingredients
3 cups cooked Basmati Rice (or 1 cup uncooked)
1 tbsp lime juice
1 tsp olive oil
1/2 tsp salt
1/4 cup cilantro (finely chopped)
Instructions
- Cook 1 cup uncooked Basmati rice with 1.5 cups water in a Pressure Cooker, Instant Pot, or Rice Cooker to get 3 cups of cooked rice. Transfer to a bowl.
- Add 1 tbsp lime juice to the cooked rice.
- Drizzle 1 tsp olive oil on top.
- Sprinkle 1/2 tsp salt.
- Add 1/4 cup cilantro (finely chopped).
- Mix well. Garnish with lime slices (optional). Enjoy 🙂

Notes
- I used Basmati Rice for this recipe. You can use any type of long grain rice. You could also use brown rice!
- This recipe is inspired by Chipotle Mexican Grill, but it is not identical and is my own version. I hope you love it!
