Chipotle Chickpea Soft Tacos

Anytime we go to a restaurant that has an entree involving Chipotle anything or offers a side of creamy Chipotle sauce, you can bet my husband will get it. He just loves the flavor and he’s gotten me hooked on it too! I still like Verde sauces (made from Jalapeños  or Tomatillos) best, but a creamy sauce Chipotle peppers does taste absolutely delicious.

I have found that the easiest way to recreate a bomb creamy Chipotle sauce is to mix a bit of Chipotle hot sauce (we typically buy Cholula Chili Chipotle Hot Sauce) with a creamy base such as Sour Cream, Mayo, or Yogurt. It tastes just like the one at Taco Bell!

A dollop of this sauce is perfect on most Mexican dishes. It especially tastes amazing with these Chickpea Tacos that I came up with. The chickpeas are seasoned with cumin powder, paprika, and taco seasoning. If you love Mexican spices, this dish is for you! It’s also incredibly easy to put together. Fifteen minutes later, lunch or dinner is served! 🙂

Soft Tacos with a spicy chickpea filling and topped with creamy Chipotle sauce

Ingredients

  • Chickpea Filling
  • 1 cup cooked chickpeas (1/3 cup dry chickpeas)

  • 1 tbsp olive oil

  • 2 cloves garlic (minced/crushed)

  • 1/4 tsp garlic powder

  • 1/2 tsp paprika

  • 1 tsp cumin powder

  • 1 tbsp taco seasoning

  • Salt to taste

  • Tacos
  • 4 tortillas (fajita sized)

  • 2 tbsp sour cream

  • 2 tbsp Chipotle sauce

  • 2 cups Romaine lettuce (shredded)

  • 1/4 cup shredded Mexican cheese

  • 1/2 medium tomato (finely chopped)

  • 1/4 small red onion (finely diced)

  • 1/2 small lime

Instructions

  • Make the Chickpea Filling
  • Cook 1/3 dry cup of chickpeas in an Instant Pot or Pressure Cooker to get 1 cup of cooked chickpeas (see “Notes” section below for cooking instructions). Alternatively, you can use a 8 oz can ( 1 cup) of cooked chickpeas.
  • Heat 1 tbsp olive oil in a sauté pan at a medium flame.
  • Add 2 cloves garlic (minced/ crushed) and sauté till aromatic.
  • Then, add in 1 cup cooked chickpeas.
  • Sprinkle in 1/4 tsp garlic powder, 1/2 tsp paprika, 1 tsp cumin powder, 1 tbsp taco seasoning, and salt to taste. Mix well and sauté for a few minutes. Then, take off flame and keep aside.
  • Assemble the Tacos
  • Heat up 4 tortillas in a microwave or on the stove. (Note: I placed all 4 tortillas on a plate and heated them up for 30 seconds. Then, I flipped them over and heated them up for another 30 seconds. Alternatively, you can heat them up on the stove with a little oil.)
  • In a small bowl, combine 2 tbsp of sour cream with 2 tbsp of Chipotle sauce. Mix well.
  • Spread a bit of the creamy Chipotle sauce on each tortilla. (Note: I used about half to spread on the tortilla and the rest to dollop on top.)
  • Place tortillas on a taco stand to make it easy to fill.
  • Spoon some of the chickpea filling on top of the sauce. (Note: Divide the filling evenly amongst the four tortillas.)
  • Top the chickpeas with a generous handful of Romaine lettuce (shredded).
  • Add a bit of shredded Mexican cheese, finely chopped tomatoes, finely diced red onions, and more creamy Chipotle sauce on top of each taco.
  • Finally, squeeze a drop of lime juice on top of each Chipotle Chickpea Soft Taco. Enjoy! 🙂

Notes

  • If you are cooking your chickpeas, I would suggest you soak them overnight in enough water to completely cover them. If cooking in a pressure cooker, cook at medium heat for 5 whistles. If cooking in an Instant Pot, cook soaked chickpeas for 10-15 min or dry chickpeas for 35-40 min.
  • I used Mission Taco “Fajita” sized Flour Tortillas. You can use any type of tortillas you prefer (corn, wheat, etc), but I would recommend “Fajita” sized ones.
  • Instead of sour cream, you could mix Chipotle hot sauce with Mayo or thick Yogurt to get a similar creamy Chipotle sauce.
  • This is a fun recipe that I came up with. I hope you love it!
  • Vegan Option: Omit cheese and sour cream or use Dairy Free options for Vegan tacos!
